Unpasteurized miso will keep fermenting and will ferment
faster at warm temperatures, so to preserve the flavor, we recommend
that you store your miso in a cool place or in the refrigerator.

If refrigerated Shinmeido miso will keep indefinitely.
-How do I use miso?
Use miso to replace salt, bouillon cubes, or soy sauce in
savory dishes, soups, salad dressings and sauces. In general, unpasteurized
miso should be added after all other ingredients have been cooked,
just before serving. To add miso to soup, first dissolved it in
a ladle of broth then add the diluted miso to the soup.
